The roseate spoonbill (Platalea ajaja) is one of Florida's most photographed birds and one of its best comeback stories: plume hunters reduced the state population to a few dozen pairs by the 1930s, and today they're a common sight sweeping their flat, spatula-shaped bills side-to-side through shallow water to snap up shrimp and small fish.
